You don't have to use beef broth to make onion soup. In fact, any soup that isn't based around a meat can be modified to be vegetarian without compromising flavor. This is my own personal recipe, which is absolutely excellent!
2 or 3 large onions, 1 red, 1 white or yellow sliced thinly
4 tablespoons of butter and a dash of olive oil
salt
pepper
1 tsp of sugar
2 tbsp of flour
3 tbsp of worcestershire sauce
1/4 cup of red wine (any kind, but don't use expensive wine)
4 cups of vegetable broth
2 cups of water
3 minced garlic cloves
slices of toasted baguette
slices of swiss cheese
salt, sugar, and pepper onions and garlic and saute in butter and olive oil until caramelized. Add flour and stir. turn off heat.
in a pot, add the broth, water, wine and worcestershire sauce. add in the carmelized onions and bring to a boil. Add more worcestershire, salt and pepper as needed. let water evaporate some, so that the flavors condense.
Once it tastes "perfect" ladle the soup into some microwave safe bowls, and add slices of toasted baguette to the soup until the surface is covered. layer a slice of swiss on top. microwave for about 1 minute. You can also use oven safe bowls and bake this until the cheese is melted.
Let the soup cool a bit and enjoy!
Note - You can omit butter and just use olive oil and I did use garlic toast on top of the soup. I also prefer sea salt, because you can use less and get more flavor fast.
