I love summer! I especially love when I can harvest fruits and vegetables and makes jams, sauces, and fruit butters to enjoy all through summer, fall and winter. This is a delicious and healthy marinara sauce that you can use for spaghetti, pizza, lasagna, eggs in purgatory, etc. I jar up several and place them in my freezer.
Ingredients
Two basketfuls of tomatoes (any type) sliced in half
1 large onion, chopped
1 bulb of garlic, half peeled, half peeled and minced.
1 grated carrot
1 handful of fresh basil, washed and chopped
1 tbsp of dried oregano
Salt and pepper to taste
Olive oil
preheat oven to 400 deg Fahrenheit
throw tomatoes, and whole cloves in the pan, toss with olive oil, roast in the oven for 1 hour.
Sauté onions and minced garlic in a stock pot, with olive oil, salt and pepper until soft. Add roasted tomatoes, grated carrot, garlic and the juices from the pan. Mash with a potato masher. Add basil, and oregano, and simmer for an hour uncovered, on low. Use an immersion blender and blend until smooth, add more salt and olive oil as desired. Simmer uncovered for 5 hours on low.
Ladle into mason jars, seal and process for 25 minutes in boiling water. I still store this in my freezer.
