I used to think applebutter was complicated, but really its a little bit of work in the beginning, and a little bit of work at the end. This recipe is amazing. Its a keeper.
Slow cooker Apple Butter
5 Lbs of peeled, and cored apples
1 and 1/2 cups of brown sugar
1/2 cup of coconut sugar
2 tablespoons of cinnamon
1 teaspoon of nutmeg
1/2 teaspoon of cloves
1 tbsp of vanilla Extract
Slices the apples and layer into a slow cooker. Pour the sugar and spices over the top.
Put the slow cooker on low with the lid on, and after one hour, stir the apples to mix up the contents. Stir occasionally thereafter, for the next 9 hours while keeping the lid on between stirs.
After 9 hours, take off the lid, and use a hand blender to purée the apples into a smoothe butter. Continue to cook on low for an hour or two, stirring occasionally with the lid off to thicken.
Pour into mason jars, and seal. Let them cool down and freeze them or you can immediately place them in a double boiler with 2 inches of water above the lids, and boil for 25 minutes. Cool until the lids pop down and store in a dark and cool place.
