This makes two loafs or 1 big loaf 24 servings 253 calories a serving
2 and 1/2 cups of all purpose flour 1/2 cup of rolled oats 1 teaspoon baking powder 1 teaspoon of baking soda 1 teaspoon of salt 2 and 1/4 cups of sugar 1 cup of canola oil 3 eggs 1 tablespoon of vanilla extract 1 tablespoon of cinnamon 2 cups of grated zucchini 1 cup of chopped walnuts
Mix flour, oats, baking powder, baking soda, salt, cinnamon and walnuts in a bowl and set aside
Mix sugar, eggs, canola oil, and vanilla in another bowl. Slowly stir in the flour mixture until well mixed. Add the grated zucchini and mix well.
Pour into 2 greased loaf pans or 1 large greased Bundt cake pan.
Bake at 325 degrees for 60 minutes to 70 minutes until an inserted knife or toothpick comes out clean.
Cool completely and use a knife to slide around the edges to pop the loaves out.
