I saw a post the other day on Instagram in which a tiny home follower was having a delicious breakfast of a baked apple, with oats, nuts, seeds and maple syrup. The picture looked great! From the image, it looked like the person lived in Germany, or maybe I was confusing them with a similar tiny home I saw in the Czech Republic? Who knows, but I had all these things in my cupboards, and I had a bunch of apples I needed to consume right away in my cellar.
I made a recipe of my own, that is totally vegan and is roughly 385 calories per serving. This is a breakfast for two, just double up if you need to make more. You can also make this a dessert if its too sweet for breakfast.
Baked Apples for Breakfast
2 servings - 385 calories each
Ingredients
2 apples, peeled and cored
1/4 cup of rolled oats, uncooked
2 TBSP of chopped unsalted pecans
1 TBSP of dried currants
1 TBSP of unsalted sunflower seeds
1 and 1/2 TBSP of coconut oil
1 cup of apple cider
1 TSP of cinnamon
2 TBSP of Maple Syrup
1 x 9" square baking dish or any small baking dish
Preheat oven to 375 deg. Fahrenheit
Mix the oats, pecans, dried currants, sunflower seeds, cinnamon and coconut oil in a bowl, and stuff into the core of the apples, packing tightly. Pour the remaining mixture on top of the apples, its ok if it falls over. Pour the apple cider into the pan and gently baste the apples before placing into the oven.
Bake for 1 hour
Place the apples into a bowl, and divide up the mixture and cider between the bowls. Pour 1 tbsp of maple syrup over each top.

You may have to use a knife to cut into the apple as you eat*
