This is one of my favorite fall time and winter time treats. I love to have it warm, for breakfast or as a snack. I also like to put some of my homemade apple butter on top.
Apple walnut bread
Preheat oven to 350 deg Fahrenheit
Grease and flour an 8x4in loaf pan
1 and 1/2 cups of all purpose flour
1/4 cup of rolled oats
2 tsp of baking powder
1/4 tsp of baking soda
1/2 teaspoon of Himalayan pink sea salt
1 cup of coconut sugar
1/2 cup of chopped walnuts
1 Tbsp of cinnamon
1/4 tsp of cloves
1/2 tsp of nutmeg
2 eggs
1 cup of diced apple
1/2 cup of canola oil
1 tsp of vanilla extract
10 - 12 Apple slices
Mix the dry ingredients in a bowl - flour, oats, baking powder, soda, salt, sugar, walnuts, cinnamon, cloves, nutmeg.
Mix in eggs, oil, diced apple, and vanilla extract.
Mix all the ingredients well and pour into the bread pan.
Place apple slices on top in a pretty design.
Bake 1 hour to 1 hour and 10 minutes until a toothpick comes out clean.
I usually bake 2 or 3 loaves at a time, and freeze the extra. They freeze wonderfully, and you can take them out the night before.
