Acorn squash spice bread
Split acorn squash, scoop out seeds, coat with olive oil and roast for 1.5 hour(s) in the oven at 400 Fahrenheit. Scoop out insides and mash.
*to make buttermilk, take 1 cup of regular milk and add 1 tablespoon of vinegar, let it sit for a few minutes.
———Acorn Squash Spice Bread——
Preheat oven to 350 Fahrenheit
This makes two loafs or 1 big loaf
3 cups of all purpose flour
1/2 cup of rolled oats
4 teaspoons baking powder
1/2 teaspoon of baking soda
1 teaspoon of salt
2 cups of sugar
1 cup of canola oil
1 cup of buttermilk*
2 teaspoons of vanilla extract
1 tablespoon of cinnamon
2 teaspoons of ground ginger
1 Mashed acorn squash (see note above on how to prepare)
Mix all the ingredients above in a mixing bowl, and pour into the following;
Option 1:
2 greased loaf pans - fill halfway - bake 45 minutes to 1 hour at 350 Fahrenheit until a knife comes out clean from the center
Option 2:
1 large greased Bundt Cake pan - this should fill halfway up. Bake 1 hour and 15 minutes at 350 Fahrenheit until a knife comes out clean from the center
Option 3:
Greased Muffin / cupcake pans (makes 2 dozen) - Fill halfway, bake 35-40 minutes at 350 Fahrenheit or until a toothpick comes out clean from the center.
